Steamed Sea Bass with Lime

Whenever my family & I go to a seafood restaurant in Thailand, one of the frequent dishes we order is ‘plaa kapong neung manao’ or steamed sea bass in a sauce (or more like a soup) made with lots of fresh lime juice, garlic, and chilies. This recipe is quite simple, and as long as you can get a fresh fish, you can make this at home and it takes just about 30 minutes to prepare.

Ingredients:

1 sea bass
A few hot chillies finely chopped
6 cloves peeled garlic
2 white spring onion stems cut into 1” long pieces
Lime juice
1 tbsp light soy sauce
½ cup of chicken stock

  1. Make sure your fish is scaled and gutted, and then score the fish with 3 diagonal incisions on each side of the fish.
  2. Mix chopped chillies with chicken stock, lime juice and soy sauce in a bowl and mix well.
  3. Pour mixture over the fish and sprinkle spring onion and garlic on top.
  4. Steam over boiling water on high heat for approximately 15 minutes or until done.
