Steamed Sea Bass with Lime
Whenever my family & I go to a seafood restaurant in Thailand, one of the frequent dishes we order is ‘plaa kapong neung manao’ or steamed sea bass in a sauce (or more like a soup) made with lots of fresh lime juice, garlic, and chilies. This recipe is quite simple, and as long as you can get a fresh fish, you can make this at home and it takes just about 30 minutes to prepare.
Ingredients:
1 sea bass
A few hot chillies finely chopped
6 cloves peeled garlic
2 white spring onion stems cut into 1” long pieces
Lime juice
1 tbsp light soy sauce
½ cup of chicken stock
- Make sure your fish is scaled and gutted, and then score the fish with 3 diagonal incisions on each side of the fish.
- Mix chopped chillies with chicken stock, lime juice and soy sauce in a bowl and mix well.
- Pour mixture over the fish and sprinkle spring onion and garlic on top.
- Steam over boiling water on high heat for approximately 15 minutes or until done.
